Please see below some additional information re operating & cooking with various solid fuel & gas lava rock high performance equipment.

  • Charcoal model cooking procedure

    1. Place a pile of charcoal into the fire pit with odourless firelighters under
    2. Light up the firelighters
    3. Wait until the charcoal is mostly bright red glowing & spread coals out
    4. Sprinkle more charcoal onto the bed
    5. When the coals are nearly all red start cooking
    6. Use the different skewer galleries to regulate cooking heat & control any flaring on rotisseries
    7. Use the bottom level to seal off & middle levels to cook through, top-level to keep warm or slow cook.
    8. Parrilla grills with lifting system, use the various heights to regulate cooking heat & control any flaring
    9. Please request our chef training option on-site for in-depth preparation & cooking training
  • Gas lava rock model cooking procedure
    1. Fill water trays to 50% full with tap filler or jug, water keeps the machine cooler, offers some humidity for the cooking & catches drippings that go past the rocks & burner covers.
    2. Turn on the pilot valve
    3. Hold the safety valve button in & ignitor button
    4. Once the pilot flame is lit upkeep the safety button for 1-2min until the pilot remains on
    5. Turn on main burner valves
    6. Heat rocks up on high for 15min, then adjust burner heat back to suit cooking.
    7. Use the different skewer galleries to regulate cooking heat & control any flaring on rotisseries
    8. Use the bottom level to seal off & middle levels to cook through, top-level to keep warm or slow cook.

  • Does Proline Equipment have stock of machines?

    Yes, we hold many machines in charcoal & also gas models in Belrose Sydney. If there is anything we do not have in stock we can order equipment via sea or air freight.

  • Does Proline Equipment hold spare parts & offer warranty?

    Yes, we hold all major spare parts for our machines in Sydney & offer 2 years parts & labour warranty on commercial machines & 12 months on residential machines. We have a national network across AU/NZ of licensed technicians to look after machines in all areas.

  • Can I use wood with the charcoal models?

    Yes wood can be used mixed in with charcoal on the solid fuel models. There is fire box options available for both commercial & residential models especially for burning wood so the red hot charcoal pieces fall underneath & can be scraped out to the cooking areas.  Please check with us for more info.

  • How can I order a fully customised machine for my venue?

    Please contact us with some basic information such as below so we can brief the engineers for our proposal:

    • Your location & business details?
    • Size of machine in total width?
    • Charcoal or gas fired?
    • Required supply time?
    • Type of cooking? Steak house, takeaway, catering…
    • Finish on machine? black, stainless, glass, special requirements…
    • Proportions or size of sections rotisserie, grills, spits, fire box etc
  • Does the gas lava rock commercial models give the same flavour as charcoal?

    The best possible flavour is solid fuel (charcoal/wood) models. However, our high-performance gas lava rock models get to around 60-70% of the way towards charcoal flavour according to most of our customers.  Our gas models boast one of the highest gas MJ ratings on the market giving very high heat cooking, drippings drop onto the hot lava rocks giving a great charred flavour while adding to the theatre of cooking in your restaurant.  The gas lava rock models have the appearance of solid fuel units when cooking but are classed as a gas appliance.   • Upon purchase of a Scheer machine can I have some on site cooking training?

    Yes, we can offer our experienced training & demo chef to visit your venue as an option with commercial machine purchase from us. Our chef can cook on-site for 1-2 days or more if you need. Please ask us for more details.
